Notes
Feel free to mix up the ingredients. I have heard some people use maple syrup sugar instead of brown sugar. You can also use your favorite sugar substitute.Place ingredients in a bowl or mug. Add around 1 cup of boiling water (depending on how thin or thick you like it), stir, and let it sit for about 5 minutes to cook. If you used old fashioned oats, the cook time will need to be longer.A special note about chia seeds: please wait the full 5 minutes for the oatmeal to cook. Chia seeds will swell up to 10-12 times their weight in water and that’s a good thing. You want the seeds to swell before you eat them. Eating dry chia seeds can cause choking and blockage in the esophagus.
